Walnuts- We source our Organic Walnuts from a 300-acre family farm in California that specializes in organically grown fruits and nuts. Words from the farmer: “Our commitment to organic farming runs deep. We have been growing crops organically for over 25 years now, and we have been certified by CCOF (California Certified Organic Farmers) for over 18 years. We were one of the early pioneers in the organic industry, growing organically long before it became fashionable.”
Pecans- The fertile Southwest is ideal for growing sweet, nutritious and versatile Organic Pecans. Pecan is a large deciduous tree native to central and southern parts of the United States. In spring, the tree produces clusters of flowers that develop into the fruit by autumn. Pecan nuts are technically a fruit surrounded by husk. Pecans are a good source of protein and unsaturated fats and an excellent source of manganese and oleic acid.
Almonds- Our Awakened® Almonds are raw Organic almonds that are soaked overnight in pure salt water, initiating germination, and helping reduce enzyme inhibitors (phytic acid) that make all nuts hard to digest.
Soaked nuts are also referred to as sprouted, but since the tiny sprouts are unseen, we use the term Awakened®. After soaking, we dehydrate the nuts at low temperatures until they reach crunchy perfection.
Hazelnuts- Lightly roasted, Oregon-grown whole Organic Hazelnuts!
Our local Organic hazelnut grower, Jim Birkemeier of Meridian Orchards, has been growing hazelnuts his entire life; as a boy, he hand-harvested nuts from his family’s one-acre orchard.
When we visited his farm, Jim toured us through his beautiful 80-acre Organic orchard filled with tall, old, regal hazelnut trees, and shared with us his unique natural methods for attaining high-quality, Organic hazelnuts and for strengthening the disease resistance of his trees.
Jim feels his most effective strategy against disease is to keep his orchard healthy. He’s worked for years to perfect his own compost tea (made with cured manure) which he uses as a natural fertilizer around the base of the trees. He also sprays his trees with kelp to nourish them through foliar feeding.
Jim’s hazelnuts are harvested from the ground around the end of October, then sent to be shelled and dried down to 10% moisture, so they will store for one year.
Jim is an exceptionally bright, innovative, and dedicated organic farmer, one of a very few local Organic hazelnut growers.
We use Meridian Hazelnuts to make our Organic Roasted Hazelnuts. Made in small batches to ensure freshness, our hazelnuts are lightly roasted to bring out a rich, nutty-sweet flavor.

A great mineral source, a typical 1 oz serving contains 31% of the daily recommended value for copper, along with 23% for manganese, 20% for magnesium and 17% for phosphorus, add to that 12% of the daily recommended value for vitamin K. Cashews contain zero cholesterol. All but a small amount of the fat in cashews is the good kind - oleic acid.
Fun Cashew Facts: Indigenous South Americans were removing the outer coating and roasting cashews long before the Europeans arrived. The Portuguese carried cashew trees back and planted them, spreading the cultivation and appreciation to other European countries. On any continent in the 1500’s, owners of cashew trees were considered very wealthy and important.
